By far the best value in Apple's lineup - it's a lot of computer for $599. Same chip as the $1,500 iMac, $1,299.00 MBP, $1,249.00 MBA, and $1,099 iPad Pro.

No, it just indicates the fact, that there is not a huge demand for the 8GB models...
No 16 GB on sale anywhere I know, just the 8 GB.

Costco has the same price in-store and online - $599.99 for the M1 Mac mini - 256 GB. If you buy it on the Costco Citibank Visa card you effectively get 4 years of warranty for free.

It is a good deal if you will use the mini headless as I do. I remote in with my iPad Pro or M1 MBA. Otherwise, the actual price is much higher, unless one already has the necessary peripherals.
I only spent $30 extra dollars on a wired keyboard and mouse for my base M1 Mini. Already had a 4K monitor and nice speakers.
