As with all of Apple's Activity Challenges, the New Year challenge will be accompanied by an award that can be viewed in the Fitness app as well as a series of animated stickers that can be used in the Messages app.

This glitch seems to have been around for a long time. No clear fix but it couldn't hurt to restart both the phone and the paired watch. Maybe then give it a day or two and it might magically reappear.
FWIW I did this on New Year's Day because it seemed like some activity data was missing, the restarts seemed to fix it. Also I have to restart after crossing time zones otherwise things don't look right in the app.
