Anyone use one as a media server primarily? Would it be overkill for Plex with like 2-4 streams max?
I use a M1 Mini as a Plex server and surveillance camera video recorder... I wouldn't say it's overkill at all, for the price it's ideal. Over the years I've piled on other services, so it's a BitWarden server along with a number of crontabs, Docker, web server, etc.

Anyone know of any deals (other than refurbished) for the Mac mini 16GB 1TB variation?
Apple's own refurbs are indistinguishable from new. Same warranty, same everything. The box is a little plainer, but that's it.

I use an M1 Mac Mini with the OWC MiniStack (configured with 16tb WD Red Pro HDD) as a media and home server (email, web hosting, Plex, ipTV, HomeBridge and Homekit, etc). It is overkill for Plex, but.... its better than any NAS if you're deeply integrated into the Apple ecosystem. Worth every penny.

they should have made the product lineup:

Mac Mini -> Mac (Studio) --> Mac Pro

my OCD is triggered.
If you want even more triggering, it's actually the Mac mini. The "m" is lower-case.
